Pungent fresh herbs, earthy chickpeas and fava beans, thick cool yogurt, and ample olive oil—all hallmarks Lebanese cuisine. Combine them one way, and you get a refreshingly piquant salad. Prepared another, and you make a rich main dish. It's all in the technique. Join Samira Hamdoun to dive deep into the vegetarian summer dishes of Lebanon. You will not only learn to make four perfect summer recipes, you will also learn about culinary culture from Samira's homeland. In class we will learn, discuss and taste as we make Tabouli Salad, Falafel, Sautéed Green Fava Beans with Cilantro, and Fettah, a popular Lebanese dish made with yogurt, soft cooked chickpeas, pita chips and roasted nuts.
Note: Guest Teacher Classes are special opportunties to learn about a culture, cuisines, or technique from experts. Unless otherwise noted, they do not require advanced cooking experience.
About Samira: Samira Hamdoun is the owner of Samira’s Homemade Food, a specialty food business based in Cambridge, Massachusetts. Samira grew up in a large family in Beirut, Lebanon, which at the time was the Paris of the Middle East and its leading financial center. As is the tradition, a large family meant many opportunities to get together and share homemade Lebanese food. Samira developed a passion for food at a young age. She encouraged her mother to go out so she could make her own dishes for her very appreciative brothers and sisters. Samira still makes everything as if it is for her own family, using only the best all-natural ingredients.
Today, Samira’s Homemade Food is a rapidly growing premium brand of all natural, authentic Lebanese spreads, including Baba Ganoush, Muhammara and Labne with Zaitoun. These delicious dips are produced in Cambridge and delivered the next day to retailers like Whole Foods, Russo’s, Pemberton Farms and other gourmet food retailers in the greater Boston area.
