We are excited to welcome back our dear friend and marvelous chef, Simone Proietti-Pesci. Born in Spoleto, Italy and steeped in the traditions of the Umbrian kitchen, Simone Proietti-Pesci, chef-owner of Bevagna’s renowned restaurant le Delizie del Borgo is returning to the Via Umbria kitchen. Learning to cook in his grandmother’s kitchen, his style is intuitive - a little bit of this, a pinch of that, something fresh from the garden - creating the perfect dish. Despite his young age, he has run his own restaurant for more than a dozen years - developing a passionate following both locally and internationally.
Drawing on the Umbrian tradition of simplicity and freshness but demonstrating their own innovativeness, Chef Simone and Chef Liam have created a menu that focuses on the rare and incredibly flavorful Black Truffle. Black truffle is a centerpiece truly worthy of a dinner of this magnitude and will not disappoint. The chefs will lead your group through each course and educate it on the flavors in each dish and answer any questions you may have. For our Dinner at the Chef's Table series, we serve a single fixed menu each night (with a vegetarian offering possible with advance request) and have one seating at 7:00pm. All guests sit communally at one table. Each course is served at the same time and our Chef will join you at every course to describe what has been prepared and to answer any questions you may have. Every seat is a seat at the chef's table.

Wine Flight Each week the Chef will pair each course with a different taste of wine - enjoy four - 4 ounce pours with your dinner for an additional $25.
